Recipe: Vanilla Baked Oats with Berries

Serves: 4

Ingredients

2 cups gluten-free oats

1.5 tsp baking powder

1 tsp vanilla powder

2 cups milk of choice

4 ripe bananas, mashed

1.5 cups fresh or frozen mixed berries

Greek yoghurt, to serve

Directions

  1. Pre-heat the oven to 180C.

  2. Using a high-powered blender, blitz up half the oats to a flour.

  3. In a bowl, mix together the oats, baking powder, vanilla powder, milk and bananas. Fold in the berries.

  4. Pour mixture into 4 greased, oven-proof dishes and bake for 25-30 minutes, or until golden on top and a skewer inserted to the middle comes out clean.

  5. Serve hot or cold, topped with a dollop of Greek yoghurt.
